Where are all the mushrooms hiding? Steven Jackson knows! Meet Trezo Mare's new Sous Chef and check out his haul!
Steven Jackson’s passion for cooking began at thirteen, standing on milk crates while washing dishes in the kitchen of the restaurant where his mother worked. Born and raised in Cincinnati, Steven’s mother and uncle, both chefs, became his inspiration. Due to necessity, his mother promoted him to line cook just three weeks later. After three years as line cook, he moved to his uncle’s French restaurant to expand upon his growing passion. Eighteen months later, he realized his need to travel in order to deepen his culinary knowledge and to sharpen his skills. Steven’s uncle encouraged him to move to Charleston, South Carolina, to work alongside a Michelin Chef that his uncle had trained with in France. He later met Chef Tom Colicchio, head judge on Bravo’s show, “Top Chef.” Chef Colicchio invited Steven to apprentice with him at a private club on Kiawah Island, off the coast of Charleston. Steven’s passion was intense and he worked seven days a week, even on his days off and without pay. Steven explains, “French training is extreme and disciplined” and the reason that he is dedicated and serious on every aspect in the kitchen. For seventeen years he gained experience in several types of kitchens from small restaurants, hotels, resorts and fine dining. In addition to working with Chef Tom Colicchio, he also had the opportunity to work alongside: Martha Stewart’s personal Chef, Pierre Schaedelin, Michelin Guide - Two Star Executive Chef, Christian Deslandes, and Chef Udo Prambs, Master Chef L’auberge. Steven chose to move to Kansas City due to the “up and coming culinary movement" happening here. Steven first worked at the Carriage Club with Chef Ross Fraiser, who was trained by Chef Gorden Ramsey. When colleagues learned there was an opening for a sous chef at Trezo Mare, they encouraged Steven to meet with the Executive Chef, Robert Padilla. Upon meeting with Chef Padilla, an immediate bond was established due to their like-minded passion in creating food from scratch, and using only local and fresh ingredients. They are currently collaborating and developing Trezo Mare's upcoming seasonal menu that promises seasonal, inspired, and relevant food. Chefs will experiment with specials that include wild greens and mushrooms that Steven forages himself. As Trezo Mare’s new Sous Chef, Steven knew he had landed exactly where he belonged.
