What a great night we had for the New Year. I won't go into details, but I will just say a quick thank you to those who joined us to ring in the New Year. We had a lot of people and some came for the first time! I hope we made a great impression.

Wow, what a fun Christmas vacation (and by vacation, I mean 2-day stint of apple cider, presents, and more cookies than I ever want to see again) with my Kansas City family. I hope that everyone else had a great time, and wish someone who celebrates it a Happy 1st Night of Kwanzaa tonight!
For New Year's Eve, I'm planning on doing a "Box of Chocolates". What's that? You think that because I'm not a classically trained pastry chef that I can't accomplish this massive feat of culinary skill????

Kansas City Restaurant Week is basically a time when a bunch of restaurants in the area get together and put together a prix fixe menu in which 10% of the proceeds of said menu go to a charity. I can't tell you all of our menu, yet, but I can tell you that we'll be featuring creme brulee and chocolate bars for dessert.

This year has been a doozie!
From the CCVI's Food Fight V in January to the CCVI's Gingerbread Lane this holiday season, it turns out that Trezo Mare is, in fact, a big supporter of the Children's Center for the Visually Impaired. Click on the link if you want to know more about it.
Some of you might know that I'm a fairly active member in Kansas City's Chapter of the ACF(American Culinary Federation). The ACF does charity work, fundraisers, and lots of other fun things. The network of Chefs in this town is truly something to behold, in this humble blogger's/chef's opinion. I must say that I didn't expect the food scene to be what it is when I moved here, but I'm very glad I did.
This holiday season, I feel that it's the responsibility of the privileged to give back. I do charity work when I can because I have no family out here, except for my dog, and there are many people out there that are far less fortunate than I. I encourage you to get out there and volunteer this holiday season, maybe at a soup kitchen or church or just donating money to some worthy cause. Sure, diamonds are a girl's best friend, but what a woman would find more meaningful is a donation to Children's International or the ASPCA in their name for that same amount you would have spent on the jewelry.
I realize that I may be reaching, but I'll be turning 27 in 2015, and it's really getting me to think about the world we're living in and leaving behind for the next generation. I believe that you should be the change you'd like to see in the world.
So go ahead! Bake cookies for your neighbors! Shovel the entire sidewalk around your block and not just in front of your house! Adopt a senior citizen for the holiday season! Do a random act of kindness!

I got a special request today! Someone wanted 6 orders' worth of the Tiramisu for a birthday cake for a Saturday pick-up, and I couldn't help but think what a great idea that was. With how busy Trezo has been lately, I've been making tiramisu almost every day, so it's not like it'll be a big stretch for me to accomplish this task, but I just thought it was a nice idea.
Not many restaurants have pastry chefs on staff. To tell you the truth, I've run into more pastry students working as cashiers in the grocery store than I have working actively in the industry. So what should you do, dear diner, about this unspeakable tragedy? Find restaurants with pastry chefs and order cakes from there, instead of grocery store bakeries!
Many savory chefs admittedly "suck" at doing the pastry side, so they'll either export desserts from US Foods/Sysco or order them from local bakeries rather than risking something less-than-amazing for a paying customer. Hiring a pastry chef is a bit of a luxury, and most don't do enough sales in desserts to hire on a pastry chef full-time. The ones who do hire on full-time pastry chefs tend to be country clubs of sorts, but you'll find a few restaurants here and there that do have them.
Anyway, the joys of having a pastry chef make your cake are many. Not only will they go nuts(usually) with how much they care about it, but you're pretty much guaranteed to get something truly one-of-a-kind. Who wouldn't want a one-of-a-kind birthday cake? A terrorist, that's who!
Food for thought, eh? Cake for thought, maybe... Nah, food for thought. It sounds better.

Wow, kids, what a week, so far!
Trezo is just piling up with parties and I'm all up on it like cheese on cake. Get it? Cheese on cake? Cheese cake? That's funny, right?
Every so often, I get to have a little fun with my desserts on parties. The request sheets will just say something along the lines of "cookies, assorted" or "cobblers a la mode" and I get to decide what that means. Check out the different kinds of cookies I made this week!

This weekend, (12/6 - 12/7) thanks to @chadmccan, I'll be preparing a Brunch special of Pumpkin French Toast! Brunch at Trezo Mare runs Saturday and Sunday from 11 am to 2 pm. I'm going to be teaching a Masterclass on decorating holiday cookies on Sunday, so I won't be in the restaurant, but if you come in on Saturday and ask for me, I'll come on out and say hello.
Your Pumpkin French Toast will be kept simple with maple syrup, praline bacon, and sweet marscarpone. Come this weekend and say hello!
